SOP — Pre-Shift Sheet

Required by Handbook §6 — Responsible Alcohol Service. Located in the MGMT office. Must be signed before a POS terminal is assigned. Alcohol service must never become routine.

What the employee reviews and signs, every shift

  1. BAC Chart — approximate blood alcohol content by weight/gender/standard drinks over time ('possibly' / 'impaired' / 'legally' intoxicated).
  2. Critical alcohol service policy — the ground rules: no under-21 service or entry, ID anyone who looks under 30, two standard drinks max at a time, ring before you bring (SDE on POS), cutoff = Cutoff Water Bottle + food + safe ride + Refusal of Service Report, Angel Shot response.
  3. Shift information — today's events/promos, any 86'd items, guests currently banned or cut off, pour-test status (bartenders: cannot work with a pour test lapsed >1 week).

Manager/Shift Leader duties

  • Post the day's Pre-Shift Sheet before the first shift begins.
  • Collect signatures before assigning POS terminals — no signature, no terminal.
  • File completed sheets; retain per document-retention practice (they are evidence of TABC safe-harbor diligence).
